Avocado & Egg Toast
*Sourdough bread *Avocado *Egg *Olive oil *Preferred spices
-Brush olive oil on bread and toast until golden brown -Fry 1 egg -Slice avocado -Top bread with avocado, egg and add desired seasoning. Yummy!
Grated Carrot Salad
*3 cups grated carrot *2 tbsp chopped parsley *2 tbsp olive oil *1 tbsp lemon juice *1 tbsp red-wine or balsamic vinegar *Preferred spices
-Combine all ingredients and enjoy!
Tuna Lettuce Wraps:
*Tuna filet *Avocado *Capers *Romaine lettuce *Grape cherry tomatoes (halved) *Olive oil *1/2 tsp mustard (yellow or deli) *1/2 tsp red-wine or balsamic vinegar *Preferred seasoning
-Brush tuna filets with olive oil -Heat a non-stick pan, cook tuna 1 minute on each side over medium/high heat -Mix mustard and vinegar in small bowl -Mash avocado in bowl and combine with mustard and vinegar mix -Stir in capers -Cut tuna into slices, lay slices on romaine lettuce leaves and top with avocado mix and cherry tomatoes -Drizzle olive oil, preferred spices, roll up and devour!
*2 skinless salmon filets *1 Lb. fresh green beans (ends trimmed) *1-pint cherry tomatoes (halved) * 2 tbsp pesto sauce *Fresh lemon
-Preheat oven to 400 degrees -Place green beans in cast iron pan or oven-proof cooking dish -Layer salmon filet over the green beans and spread 1 tbsp pesto on each filet *Add tomato to pan *Squeeze lemon over the top *Place pan in oven and cook for 20 minutes. Delicious!
